Sausage Lasagne

  • 8 large sausages
  • 1 small chopped onion
  • 1 level tbsp. tomato purée‚
  • Salt and pepper
  • 8 Sheets lasagne - boiled in salt water for 10 mins
  • a little cooking oil
  • 1 × 15 oz tin tomatoes
  • 1 tsp. Worcestershire sauce
  • pinch mixed dried herbs
  • 4oz grated cheese

Fry sausages in oil until brown, remove from pan. Gently fry onion for 5 mins then add tomatoes, tomato puré‚e, Worcestershire sauce and season with s & p and herbs.

Simmer gently for ten mins without a lid. Line bottom of ovenproof dish with 4 sheets of lasagne. Put 4 sausages on top, cover with _ of tomato sauce and _ of cheese. Repeat this layer. Bake at gas mark 5/180°C for 40 mins.

Vanessa's Lemon Cake

  • 6 ozs self-raising flour
  • 6ozs caster sugar
  • 6 ozs margarine
  • 1 lemon + 1 tbsp. sugar
  • 3 eggs

Cream margarine and sugar in a large bowl. Add eggs and flour alternately and beat mixture. Add the grated rind of the lemon. Put mixture into a greased loaf tin.

Cook for 1 hour approx. at gas mark 2/150°C. While the cake is still hot, take the cake out of the tin. Mix 1 tbsp. sugar and lemon juice together, skewer cake all over and drizzle lemon mixture over the cake.
